Our family started this restaurant in 1977 when Vladimir and Jitka Smetana, who emigrated to the USA in 1959, from Prague, Czechoslovakia (then under communist rule), fulfilled their life- long dream of owning a small business. Vladimir and Jitka ran the Old Prague Inn until 1993. Upon retirement, they sold the business. In 2004, Monica Smetana- Hertrich decided to reopen as the Praha Restaurant and Bar.

In 1985, upon completing her studies at the Salzburg Hotel & Restaurant Management School, Monica came back to the restaurant as the Chef. The family kept the restaurant until 1992 when they decided to sell the business. Monica, Executive Chef, was educated at the Salzburg Hotel School in Austria and trained with renowned Chefs in Vienna, Krems, and Retz. Today, Chef M uses her training and artistic talent combining old world recipes with local farm to table ingredients. Chef M creates her flavors from scratch to give her guests a truly outstanding culinary experience.

Judy B. Smetana, Ph.D., PCC, is Monica’s sister. She helps with running the front of the house operations including marketing, wine purchasing, bookkeeping and the upcoming boutique. She’s usually around during the holidays, as she teaches at Pittsburg State University in KS.

Judy’s son Martin, now Sous Chef, runs the kitchen and is adding his creative touch. He smokes a variety of meats, which are quite tasty and make amazing spaetzle dishes.

Jitka Smetana is still a part of the restaurant. She helps out by hosting and baking her delicious apple strudel. Even though Vladimir passed on in 1996, his spirit and pride of running a business live on.

As we begin our 40th year of existence, we are looking forward to the year ahead and are planning some exciting events. Chef M and her husband Greg are the proud parents of Audrey and Sophia, who will turn nine this year. They, too, can be seen helping out with the family restaurant – started by their grandparents.
